Single Variety:
Olivière Beautiful trees of a local variety. Harvested mid-November. Vegetal aromas of vine tomatoes and green almonds. Soft and unctuous in the mouth with a peppery finish. Enjoy with strawberries, chocolate, pastries and salad and also grilled prawns or fish.
Bouteillan Widespread in the South of France (Gard, Var, Hérault). Harvested in mid-November. A sturdy tree, with lovely fleshy olives. Strong aromas of white fruit, green tomatoes and freshly cut grass. Lovely fiery, herbaceous character. Best enjoyed with all salad, even rocket. Excellent with sheep’s cheese, mozzarella and fish.
Aglandau A very rustic tree which doesn’t thrive in dry conditions. Ardent and very herbaceous oil with fruity aromas of green tomato and then banana after a few months in the vat. Excellent with prawns and tomatoes. This oil also goes very well on strawberries or with pear compote.
Picholine Harvested from mid to the end of December, at full maturity. Intense on the nose with aromas of raw artichoke. In the mouth a rich bitterness, which is not a flaw. Best enjoyed on boiled and Provençal style mashed potatoes and also with grilled Mediterranean vegetables.
Blended Oils:
Cuvée Margaux Blend of 5 varieties (Verdale de l’Hérault, Cornicabra, Amellau, Cayon and Ménudal), harvested at the start of the season. Fresh and aromatic without bitterness. Soft and with an unctuous texture. A versatile oil which can be enjoyed with salad, fish, sheep’s cheese and pasta among many things.
Lucques Picholine A lovely blend of ripe fruit: black olives harvested in December. Aromas of roasted, ripe olives like in some tapenades. Ideal with Mediterranean cooking: aubergine dip, sun-dried tomatoes, peppers, courgettes… A drizzle of this oil marries well with roasted meats and steaks.
